This is a yummy rice dish that goes well with broiled fish.
1 pkg. (10 oz.) long grain and wild rice mix
1 medium to large tart, red or green apple unpeeled, diced
1 carrot, shredded
1 green onion, minced
1/4 cup organic golden raisins
1/4 cup loosely packed, fresh parsley, minced
1/4 cup toasted almonds
1/4 cup virgin coconut oil or organic butter, melted
2 tsp. poppy seed
1/2 tsp. cinnamon
1 Tbsp. organic apple juice
In medium saucepan, cook rice according to package directions.
In a large bowl, combine apple, carrot, onion, raisins, parsley, and almonds.
Add cooked rice; toss together to blend.
In a small bowl, combine butter, poppy seeds, cinnamon, and apple juice.
Add to rice mixture; toss to combine.
Serve immediately or at room temperature.
