Benefits of Dark Leafy GreensDark green leafy greens have been associated with lowering people’s risk of diabetes, stroke, colon cancer, cataracts, bone loss and memory loss.  They are packed with nutrients and contain large amounts of beta-carotene, folic acid, calcium and fiber.

For a tasty, crispy snack, toss raw kale with a little olive oil to lightly coat the leaves, spread onto a baking sheet, and bake in a 350 degree oven until crisp (about 15 minutes.)

This is kale currently growing in my Tower Garden.  Pick as you need, doesn’t get any more nutritious and simple as that!
