According to newer studies, free-foraging livestock, like wild game, have a healthier fat profile, meaning more omega-3s and less omega-6s and this same pattern is observed in the milk from organically fed cows. Agricultural researchers believe that animals tend to discard chemicals in their milk and eggs.
Call to Action:
Unless you are vegan…since the pesticides tend to concentrate in fatty tissue, you should only purchase and eat free-range grazing, organically fed livestock, which are free of chemical pollutants like antibiotics and synthetic hormones. For this reason, you should always buy organic butter, cheese and cream — definitely avoid full-fat cuts and varieties.
