Sweet Balls

Did you know that dates are one of the highest fiber foods, have more iron than beets, and more potassium than bananas?  Try these quick and healthy sweet balls.  Yum, yum! 😛

In a food processor combine:

10 oz. pitted dates
1/2 cup carob chips (you can use chocolate, but we like carob)
1/2 cup nuts (pecans, walnuts, almonds, whatever you like)
1/4-1/2 cups shredded unsweetened coconut

Whiz for a few minutes until everything is mixed and then add about 2 Tbsp. of either brown rice syrup or barley malt syrup to bind it all together.

With damp hands roll into balls.  You can roll them in graham cracker crumbs or finely chopped nuts to keep them from sticking together.  They are almost like eating a candy bar.

Experiment with the above ingredients…sometimes I add a little almond or peanut butter, sometimes I’ve added sesame or sunflower seeds.  It’s good anyway you prepare them.  I really don’t even measure anymore.
