Create a fresh fruit and vegetable tray for your child to “graze” on during the day or after school for a healthy snack. Children can eat the fresh vegetables plain or dip in the homemade ranch dressing. Serve the fresh fruit plain or dip in the homemade honey lemon dressing.
Note: The intention here is to not load the veggies down with high fat dressings or fruit with added sugar. Train your children (and retrain yourself) to enjoy fruits and veggies in their natural, raw state.
Ingredients and Preparation:
Choose any or all of these as available seasonally, but do offer a variety of color and selection.
Wash all fruits and vegetables well beforehand.
Sweet bell peppers (red, orange or yellow), cut into strips
Cherry or Grape Tomatoes
Celery, cleaned and cut into strips
Cucumber, sliced (and peeled if waxed)
Grapes (sliced in half for young children)
Kiwi, sliced (peeling can be left on for more nutrients)
Orange, peeled, seeded, and separated
Honey lemon dressing:
Add a teaspoon of honey to 1/4 cup fresh lemon juice. Stir well.
Add 1 packet of dry ranch salad dressing mix to approximately 1 cup of nonfat plain or vanilla organic yogurt.
Coat the sliced apples in orange or lemon juice, preferably fresh squeezed, to keep from turning brown.
