Here is a quick and healthy vegetable soup recipe.  Add a salad and fresh bread for a healthy meal.

Ingredients:

1 cup onion, chopped
1 cup potatoes, diced
1 cup carrots, sliced

(15 oz.) cans tomatoes
1 cup celery, sliced
1/4 cup brown rice
3 cup water
4 tsp. Celtic sea salt
1/4 tsp. basil
1/4 tsp. thyme
1 bay leaf

Preparation:

Sauté onions, celery and carrots in several tablespoons of olive or coconut oil for 5 minutes.

Add remaining ingredients and bring to boil.

Cover and simmer 1 hour.

Be creative, ingredients can be added or omitted based on availability and taste.
