This is a quick dish to prepare and very filling. Great dish to serve when you have a crowd or going to a covered-dish dinner. Just keep the lid on to retain the heat.
1 cup green lentils
1 cup brown rice
2 cups vegetable broth (if using chicken broth, use 3 cups and omit water)
1 cup water
1 large onion, diced
2 Tbsp. olive oil
1 tsp. Celtic sea salt
Place all ingredients in a pressure cooker. Put the lid on and bring pressure up to the 2nd red ring. Reduce heat to low and cook for 20 minutes.
After pressure released serve.
I generally double this recipe because we love it that much!
