This is the basic bread recipe I use regularly. I can then use the dough for regular bread loaves, French bread, raisin-cinnamon bread, pizza crust, rolls, you name it.
Place ingredients in Bosch Universal Mixer or equivalent mixer:
Add the oil, honey, salt and warm water (heated to 120°).
Add flour, 3 – 6 cups (depends on size of recipe using)
Then add yeast and dough enhancer (gluten and/or lecithin)
Add remaining flour until dough pulls away from the sides of the bowl.
Knead 6 – 8 minutes till dough is soft and pliable (the tricky part).
Then shape dough and place in greased pans.
Let rise approx. 30 minutes in a warm place.
Bake at 350° for 25 – 30 minutes.
Type of grain: I usually use 1/3 hard white and 2/3 hard red wheat
Type of oil: I use organic cold-pressed extra virgin coconut or extra virgin olive oil
Use the spoon or cup first for the oil then for the honey so it slides off.
Recipe for 2 Loaves:
3-1/3 cups wheat berries, grind in mill (Yields approx. 5 cups of flour)
1 Tbsp. (1/16 cup) olive or coconut oil
1 to 2 Tbsp. (1/16 to 1/8 cup) honey
1 tsp. Celtic sea salt
1-5/6 cups warm water
2 tsp. yeast
2 tsp. dough enhancer
2 tsp. gluten (optional)
2 tsp. lecithin powder
Recipe for 4 Loaves:
6-2/3 cups wheat berries, grind in mill (Yields approx. 10 cups of flour)
1/3 cup olive or coconut oil
1/3 to 1/2 cup honey
2 tsp. Celtic sea salt
3-2/3 cups warm water
4 tsp. yeast
4 tsp. dough enhancer
4 tsp. gluten (optional)
4 tsp. lecithin powder
Recipe for 3 Loaves:
5 cups wheat berries, grind in mill (Yields approx. 7-1/2 cups of flour)
1/4 cup olive or coconut oil
1/4 to 1/3 cup honey
1-1/2 tsp. Celtic sea salt
2-3/4 cups warm water
1 Tbsp. yeast
1 Tbsp. dough enhancer
1 Tbsp. gluten (optional)
1 Tbsp. lecithin powder
Recipe for 6 Loaves:
10 cups wheat berries, grind in mill (Yields approx. 15 cups of flour)
1/2 cup olive or coconut oil
1/2 to 3/4 cup honey
1 Tbsp. Celtic sea salt
5-1/2 cups warm water
2 Tbsp. yeast
2 Tbsp. dough enhancer
2 Tbsp. gluten (optional)
