This is a simple salad to make using available fresh fruit. Serve along with breakfast or other meal or eat for a cool snack on a hot summer day.
This recipe can be doubled or tripled depending on the number of servings needed and the number of different fruits available.
1 organic pear, cut into pieces
1 organic apple, cut into pieces
1 cup fresh pineapple, cut into tidbits
1 organic peach, sliced (if using non-organic also peel)
1/2 cup fresh blueberries
1/2 cup fresh organic strawberries
1/4 cup organic raisins
1 large banana, sliced thin
1/4 cup fresh or organic apple juice
dash of cinnamon
1/4 cup organic shredded coconut, optional
Wash fruit thoroughly, cut, and place in medium size bowl.
Mix in apple juice and cinnamon.
Use 1 tsp. orange or lemon juice if not serving immediately to deter browning of fruit.
