Flax seed is a rich source of fatty acids, which can assist in lowering high cholesterol.  This mix works as an excellent substitute for eggs.  When baking muffins rise beautifully when the flax seed mixture is used.

These measurements will help you know how much flax seed to grind and how much water to use in order to equal how many eggs is called for in the recipe.

Egg Substitute ChartUse Whole Flax Seeds
Flax Seeds + Water = Eggs
1 Tbsp. + 1/4 cup = 1
1/8 cup + 1/2 cup = 2
1/4 cup + 1 cup = 4
1/2 cup + 2 cups = 8*

Grind flax seed in blender on high speed for about one (1) minute.

Add water and continue to blend for 2 minutes.

*Using this mixture: 1/4 cup = 1 egg; 1 cup = 4 eggs.

This mixture can be stored in the refrigerator for up to 2 days.
