Baked Oatmeal

This recipe has become one of our family’s traditional Christmas morning breakfast dishes using the Christmas eggnog variation. It’s quick if you take advantage of the step done the night before.

This recipe has become one of our family’s traditional Christmas morning breakfast dishes using the Christmas eggnog variation.  It’s quick if you take advantage of the step done the night before.

Combine the following ingredients the night before to take advantage of the benefits of the 2-stage process. This do-ahead step is optional.

1/2 cup virgin cold-pressed coconut oil (or butter), melted

3/4 cup Sucanat

3 cups rolled oats

2 cups plant-based milk (almond, oat, brown rice,  or soy), kefir, or buttermilk

1 tsp. cinnamon

In the morning add:

2 eggs, beaten

2 tsp. baking powder

1 tsp. Celtic sea salt

Optional:

1/2 cup dried raisins, or

1 tart apple, diced

Bake in a greased 11 x 7 baking pan at 350 degrees for 25-30 minutes.

Top with chopped nuts, ground flax seeds, yogurt, warmed milk, or other topping of your choice.

Christmas Eggnog Variation:

Add these ingredients in the last step along with the eggs, baking powder and salt:

1-1/2 tsp. vanilla

2-1/2 tsp. cinnamon (total)

1 tsp. nutmeg
